Crespelle alla valdostana
Pancakes with ham and fontina, baked under béchamel

Crespelle alla valdostana are a festive dish. Savoury pancakes filled with ham and fontina are folded, then baked under a béchamel sauce.
Method
First make thin pancakes with flour, eggs and milk. On each one place a slice of cooked ham and a slice of fontina, then fold it into quarters. Arrange the pancakes in a buttered dish, cover them with béchamel and dot with butter and cheese. Bake until the top is golden.
A hot first course
They are served as a first course, instead of pasta, piping hot, once the fontina has melted inside.
